Abstract

The author develops the theory of the global culinary space. The globalization creates the global culinary space, where the culinary traditions of many peoples of the world are combined. The empirical analysis of the popularity of different national cuisines leads to the conclusion that there is a hierarchy of culinary powers. The author singles out countries with different degrees of culinary sovereignty. The author considers the gastronomic strategies of cities of Russia. The most popular cuisines in the Russian culinary space are the Russian, Italian, Japanese, American and Chinese cuisines.
